PECULIARITIES OF NATIONAL CHEESE INDUSTRY

We don’t need European standards, as we have our own specificity of
production. A group of several “privileged”, which found themselves
at one of the people’s diary producing companies, got an opportunity
to see peculiarities of the national cheese industry.

The morning was cloudless and sunny. The workers of the diary
production factory B were in haste to the factory. The residents of
a village in Amasia district could hardly imagine the test that was
already waiting for them in a form of a short and laconic information:
“President of Armenia is visiting the factory within the frames of
his working visit to the Shirak region”.

It is not clear what had happened in the period from getting the
information and the day of the visit. But if to think logically,
the first is a wish to justify the choice of the head of state through
imagining the factory from the best side. In its turn, this supposes
numerous organizational problems, in particular, providing ideal
cleanness and order at least during the president’s visit.

But we were very much surprised when at the appointed day our
minibus drove up the so called factory B. First, the name “factory”
was evidently too much for the given facility, as for me, a factory
is first of all associated with big vehicles and workers in white
dressing-gowns, but the sight presented to us.

>From the very first steps one finds himself under the influence
of the unforgettable amber of petrol mixed with various smelts
peculiar to agriculture, and his feet started gradually sinking in a
dark substance of the unknown origin. Then drunk with the smelt,
a visitor finds himself in a big hall with high ceiling up to 5
meters, where one of mixing aggregates was placed. Here he comes
across another new and invisible element of his pain – the amber of
cheese everywhere in the air, which is quite logical at the factory
that produces diary products. It would not seem so awful if not the
water dropping from everywhere including from under the ceiling,
creating an unbearable moisture. And imagine pink dressing-gowns
against the background of such a chaos.

Then moving forward a visitor finds himself in the most holy place –
storage house of cheese. Undoubtedly, having understood the level of
its significance, the leadership of the factory constructed a certain
“basin” made of concrete, in which the futures heads of cheese were
swimming.

The last drop of the growing sharp feelings was the unrepeatable
creation of the nature called mold and spread along the whole length
of the basin decorating it with its laced design.

The cracked walls, a little bit vanished because of the water, the
pipes with an unclear function and the pink dressing-gowns of the
workers, which were proudly waiting for the arrival of the high-rank
officials. Perhaps, this is the so called secret of a firm for cheese
production.

And the prime minister was right saying about the anti-sanitary in
the cheese industry. The reaction of the government on the given
problem is not clear yet, and have just to guess with what conscience
and thanks to what our cheese producers are going to appear on the
international level.

It is evident that after all this, I have absolutely lost a wish to
use any diary product.
