Kebabs fire up the flavor

Marinades play big role in recipes

Meat on a stick is the world’s oldest form of barbecue. Almost every culture
has its own version: Japanese yakitori, French brochettes, Asian satay,
Peruvian anticuchos, Spanish pinchos morunos, Armenian shashlik and Turkish
shish kebabs.

The origin of skewer roasting is usually tied to the Turkish history of
nomadic and semi-nomadic life, when cooking over open-field fires or in
open-pit ovens was common, according to “A Mediterranean Feast” by Clifford
A. Wright. But “given the obvious simplicity of spit-roasting meat over a
fire, I suspect its genesis is earlier,” Wright wrote.

Skewered meals can be as simple as chunks of meat on a bamboo stick or as
elaborate as colorful brochettes served at fancy restaurants. Gourmet
kitchen stores stock whimsical skewers, although Marsha Norris, sales
manager at Williams-Sonoma, said she recommends the inexpensive wooden
sticks.

“Vegetables or meat tend to stick to the wooden ones a little bit better,”
she said.

Wooden skewers should be soaked 20 to 30 minutes, which delays the burning
of the bamboo.

So what makes the perfect shish kebab? First, there’s the meat. Lamb is
traditional in Central Asia and the Middle and Near East. (Beef is also used
in Iran and the Republic of Georgia.) A marinade of some sort is essential –
first to flavor the meat, then to keep it moist during grilling. Slices of
onion or peppers placed between the cubes of meat add flavor and color. A
brisk fire is needed to sear the meat quickly, while a generous basting with
olive oil or saffron-flavored butter keeps the kebab from drying out,
according to Steven Raichlen, author of “Barbecue Bible” and “BBQ USA.”

Mike Critchfield, an owner of Critchfield Meats in Lexington, Ky., said the
best pieces of beef for skewering are “tenderloin tips, which is filet
mignon as it falls off when I cut the meat.

“A lot of people try to mix chicken and beef,” he said. “That’s not a good
idea. It takes chicken longer to cook than beef,” he said.

Kebabs are a perfect choice for any cookout. You can use meats, seafood,
vegetables and fruits to suit everyone’s tastes. They can be made in advance
so the host or hostess also can enjoy the party.

BUILD-YOUR-OWN

SHISH KEBABS

DIJON-ROSEMARY STEAK

1 tablespoon Dijon mustard

2 tablespoons fresh rosemary, stemmed

4 cloves garlic, minced

2 tablespoons freshly squeezed lemon juice

2 tablespoons balsamic vinegar

¼ cup olive oil

½ teaspoon salt

½ teaspoon freshly ground black pepper

1 pound sirloin steak, cut into 1-inch cubes

Whisk together all the ingredients (except the steak) in a bowl. Toss the
steak in the mixture until evenly coated. Cover and marinate in refrigerator
for 2 hours.

CITRUS-TARRAGON CHICKEN

1 orange, zested, then juiced, remainder discarded

1 lemon, zested, then juiced, remainder discarded

1 lime, zested, then juiced, remainder discarded

4 cloves garlic, minced

1 tablespoon fresh tarragon leaves

¼ cup soy sauce

¼ cup canola oil

½ teaspoon salt

½ teaspoon freshly ground black pepper

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

Whisk together all the ingredients (except the chicken) in a bowl. Toss the
chicken in the mixture until evenly coated. Cover and marinate in
refrigerator for 2 hours.

LEMON-GARLIC SHRIMP

3 cloves garlic, minced

2 shallots, minced

1 bay leaf, fresh or dried

2 tablespoons fresh thyme leaves

¼ cup finely chopped fresh Italian parsley

1 teaspoon chili pepper flakes

¼ cup olive oil

2 tablespoons freshly squeezed lemon juice

1 pound (16 to 20 count) shrimp, shelled and deveined

Whisk together all the ingredients (except the shrimp) in a bowl. Toss the
shrimp in the mixture until evenly coated. Cover and marinate in
refrigerator for 2 hours.

Skewer savvy

Soak wooden skewers in water for 15 to 30 minutes so they won’t burn on the
grill. Wooden skewers should be discarded after use.

Some cooks prefer flat, metal skewers so cubed food doesn’t spin while
turning. If you grill often, consider investing in a set. They are good year
after year, require no soaking and are easier to use than the wooden ones.

Shrimp, scallops and other wobbly bits benefit from the double-skewer
technique: Thread the pieces on a skewer, then run another one through the
pieces parallel to the first, about a half-inch away.

If you are having vegetarian guests, cook the meat and vegetables on
separate skewers so they can pick up a stick of vegetables. If your guests
will be assembling their own skewers, place meat and vegetables in separate
bowls.

Azerbaijani people and state will sweep away the Armenian occupants
from Karabakh and 7 regions adjoining it,” said Head of the Press
Service of the Azerbaijani Defense Ministry, Colonel Ramiz Melikov in
his interview to the Azerbaijani “Zerkalo” newspaper.

He disagreed with the opinion that Azerbaijan loses the information
war, adding that official Baku and the whole Azerbaijani people try to
inform the world community of the deeds and policy of Armenia. “How
could the officers of the Armenian armed forces which had occupied the
lands of the neighboring state and brought the Azerbaijani people so
troubles occur in Baku to participate in the exercises. Such an
impudence is characteristic only to Armenians,” Melikov said. He said
that Azerbaijan tries to avoid military resolution of the conflict by
all means possible. Melikov said that Armenia pretends that it is a
supporter of peaceful resolution of the conflict, at the same time
placing a huge quantity of illegal weapons in the occupied
territories.

As regards the cancellation of NATO exercises “Cooperative Best Effort
2004,” Melikov said that NATO leadership went on such step in
conformity with its principles. “Armenia does not support peace both
in the South Caucasus and in the whole Europe, otherwise, it would
have given its agreement for peaceful settlement of the conflict
during 10-year-long Armenian-Azerbaijani negotiations,” Melikov
said. He added that cancellation of the exercises will not affect
Azerbaijan-NATO relations, and that NATO leadership “must take into
account the fact that Armenia considers cancellation of the exercises
in Baku its own victory.” He said that Armenia’s participation in the
Cooperative Best Efforts 2004 pursued the only goal of making a blow
on the idea of peace-making and mission of cooperation, and it
succeeded. “We hope that the leadership of the largest international
structure will not allow Armenians to interfere into its affairs in
future,” Ramiz Melikov said.

Gul: We Have No Plan B About EU

NEW YORK – “The government does not have `plan B` in case it fails
to win a date from the European Union (EU) for start of entry
talks,“ Turkish Foreign Minister & Deputy Prime Minister Abdullah
Gul said on Friday.

Gul addressed the Turkish-American Business Forum in New York.

Asked if the Turkish government has `plan B` in case the EU makes a
negative decision about Turkey in December, Gul said, “we have no
such plan. We have reached the end of our forty-year work. We have no
energy to prepare such a plan after current stage. Turkey`s EU target
has not come out with dream or desire. We should be realistic. We
wrote down the criteria required for it one by one. We crossed out an
article we have completed. Now that we see that the things we should
fulfill lessened. Besides, the European leaders know the consequences
and negative impacts of a negative political decision after all the
conditions are met.“

Stating that end of 2004 would be recorded as an important turning
point in Turkey`s history, Gul said, “Turkey and EU will start talks
on full membership. No obstacle remained in front of it. The same
conditions should be imposed on Turkey as other members.“

Gul said, “I can say that political criteria are met in Turkey.
There has been very significant developments in economic conditions.
There is no more obstacle to start negotiations. European leaders
know this very well. All those changes will be reflected in the
commission report. A political decision will be made and negotiations
will start without losing time. This will be the start of a new
period in Turkey.“

Gul stated that there was a realistic, rational and resolved
government in Turkey.

Stating that Turkish community in the United States should be
strengthened, Gul said, “the more strength you gain here, the more
you will be beneficial to Turkey.“

Gul said there has been a transformation in Turkey, and stressed that
this transformation is not only in political area but also in
economy, culture, arts, and social life.

Emphasizing that confidence was provided in economy, Gul said on the
one hand inflation rate was dropped, and on the other hand economic
growth was around 13-14 percent. “This is an economic miracle,“ Gul
said.

Replying to a question, Gul said one of the most significant policies
of the government was improvement of relations with neighboring
countries.

“Security problems should be solved for economic development. With
this objective, the region should turn into a secure region. This can
only be provided with positive relations,“ Gul pointed out.

“The government set up sincere relations with whole Islam and Arab
world. There has been incredible increases in our trade as a result
of this. This was reflected in political atmosphere. Positive
relations are also very important for global peace. Islam countries
closely follow reforms in Turkey. I believe that the reforms will
have positive effects on those countries,“ Gul underlined.

Replying to another question, Gul said he was against use of nuclear
energy as weapon, and stated that, “we suggest this to Iran in a
friendly manner. We want the region to be purified from nuclear
weapons.“

Gul said Turkey`s relations improved with its neighbors in the
Caucasus, stating that Armenia should withdraw from the Azerbaijani
territories for normalization of relations. “Both Armenia and
Azerbaijan want Turkey to be active for resolution of this problem,“
Gul said, stating that Turkey exerted efforts for resolution of this
problem.

Armenia doesn’t intend to join NATO but will deepen relations

Yerevan. (Interfax) – Armenia intends to deepen relations with NATO
but has no plans of joining the alliance, Armenian Foreign Minister
Vardan Oskanian told a Wednesday news conference.

“Our stance amounts to the maximum expansion and deepening of
relations with the alliance. I don’t know what NATO thinks of it but
membership in the alliance is not on our agenda today,” he said.

As for Armenia’s plans for sending a group of 50 servicemen to Iraq,
Oskanian said that it would be a humanitarian mission consisting of
doctors, drivers and sappers.

He emphasized that from the very start Armenia was opposed to
military presence in Iraq.

Adolph Hitler was the epitome of human evil and the epitome of
indifference to human life. And yet, he may have understood human
nature far better than any of us would want to admit. In reference to
the West tolerating the destruction of European Jewry, Hitler is
reported to have said before World War II: “Who, after all, speaks
today of the annihilation of the Armenians?”

Who, indeed? At least hundreds of thousands, probably over a million,
Armenians died at the hands of the Turks. Hitler and the Nazis
murdered 6 million Jews. The world then reflected on genocide and
affirmed “never again.”

And yet, since that time, there have been many attempts at genocide.
Scholars currently investigating mass graves in Cambodia now estimate
Pol Pot’s more than 3-year reign led to the deaths of approximately
two million people.

According to Amnesty International: “In 1994, close to 1 million
people were killed in a planned and systematic genocide in the
central African country of Rwanda.” Most of us will remember the
attempt at “ethnic cleansing” that occurred in the former Yugoslavia
only a few years ago. In all these atrocities, torture, mutilation
and rape of the victim populations were standard procedure.

According to The Save Darfur Coalition, at this very moment, a
government supported militia “is deliberately killing, raping and
terrorizing civilians in Darfur As many as 100,000 civilians have
been killed and 1.2 million people have been driven from their
homes.”

These events in western Sudan are a genocide in the making. Let us
not allow, by our silence, indifference or ignorance, the people of
Darfur to be added to a list already far too long. Let us press both
our government and our media to prevent a larger catastrophe than
already has occurred.

Recently trade banks have been reporting growth of activity in the
financial sector. According to the data provided by the NKR National
Statistics Service, by July 1 of this year the amount of loans provided
by trade banks (in AM drams or foreign currency) totaled 8178.4 million
drams and from January 1, 2004 grew by 2144.9 million drams or 35.5 per
cent. About 76 per cent of the amount of loans which totals 6225.9 per
cent was provided in foreign currency. The amount of loans provided
in foreign currency increased from January 1 of the current year by
22.1 per cent or 1126.8 million drams. In the mentioned period the
amount of delinquent loans and extended loans totaled respectively
50.8 and 50.1 million drams. Against January 1 the amount of loans
with extended terms increased by 62.3 per cent, and delinquent loans
by 16.5 per cent. Foreign money transfers received during the first
half of 2004 totaled 5061.5 drams and grew by 89.5 per cent against
the first half of 2003. The share of the foreign money transfers by
natural persons was 19 per cent.

On September 9, Minister of Defense of the Azerbaijan Republic
colonel-general Safar Abiyev has received Deputy Commander of the
United States European Command Charles Wald and delegation headed
by him.

As was informed into AzerTAj from the press-service of the Ministry of
Defense, the visitor has familiarized with the course of preparation
for field exercises “Cooperative Best Effort-04 ” which will be
carried out in the near future in Baku within the framework of the
program of the NATO “Partnership For Peace”.

General C. Wald has expressed confidence that these exercises would
pass successfully.

Colonel-general Safar Abiyev and general Charles Wald had exchange
of opinions on the present military-political situation in region of
the Southern Caucasus and events occurring here recently.

Having mentioned the relations between Azerbaijan and the USA,
the Minister of Defense has noted, that our country relies upon the
United States of America as strategic ally, and continues cooperation
with them in all fields, including in military sphere. The Minister
has expressed concern of our people in connection with the conflicts
proceeding in region, including the Armenia-Azerbaijan, still have not
found its settlement. Having emphasized, that the said conflict renders
negative influence on realization of the project of Baku-Tbilisi-Ceyhan
and other economic projects, he has told: “It is necessary to solve
this problem shortly. Everyone should realize, that Azerbaijan would
not concede to anybody and a span of the native land”.

General C. Wald has told: “You have truly noted. On the Southern
Caucasus still there are more many non-resolved problems. The
Armenia-Azerbaijan conflict concerns to them also. The given
conflict should find its settlement internationally. The USA, Russia
and Turkey should accept active participation in solution of the
said question. It is necessary to conduct joint struggle against
terrorism. We should take part together in the settlement of the
mentioned question. Problems of your country should be settled shortly,
and economic prosperity start in the region”.

Expressing his attitude to development of military links of
our country, Charles Wald has noted, that the USA attaches great
importance to cooperation with Azerbaijan in military area, and the
said cooperation will extend.

The sides have had comprehensive exchange of views on prospects
of military cooperation between Azerbaijan and the US, and have
emphasized necessity of strengthening of combat against the
international terrorism.

Ambassador of the USA in Azerbaijan Republic Rino Harnish took part
in the meeting.

Baku, 8 September: Ten pickets from the United People’s Front of
Azerbaijan Party [UPFAP] have been arrested by the police and taken to
police station No 39 of Sabayil district. The picket was held outside
the German embassy in protest against the arrival of Armenian officers
in Baku for the NATO exercises.

As the party’s press service told our news agency, the police rudely
intervened and did not allow the picket to come to an end. All
detainees were set free after a while.

Another action of protest has been scheduled for 10 September outside
the British embassy. It has not been sanctioned either.

STEPANAKERT, August 31 (Noyan Tapan). 17 big fires were registered
in Artsakh this summer. Grigory Gasparian, Chief of the division
on Fire-Rescue Forces of the NKR Emergency Situations Department,
told NT’s correspondent that a total of 6,405 hectares have burned,
338.3 hectares of them have been mature fields. According to him, the
guilty persons and the reasons for fires have already been disclosed.
